Blue Hawaii

Not to be confused with the Blue Hawaiian (which contains cream of coconut). This 1957 original from bartender Harry Yee was invented to showcase blue curaçao. A genuine classic, not a tourist trap.

The History

Created in 1957 by Harry Yee at the Hilton Hawaiian Village in Waikiki. Bols brought him a new blue curaçao and asked him to feature it. The Blue Hawaii was the result—the drink predates the Elvis film by four years.

Servings

Ingredients

  • 0.75 oz light rum (or coconut/citrus rum)
  • 0.75 oz citrus vodka (or plain vodka)
  • 0.5 oz blue curaçao
  • 3 oz pineapple juice
  • 0.5 oz fresh lemon or lime juice
  • 0.5 oz simple syrup
  • Pineapple slice (garnish)

Directions

Shake all ingredients with ice.

Strain into a tall glass filled with fresh ice.

Can also be made frozen: blend all ingredients with one glass of ice on high until smooth.

Garnish with a pineapple slice. The color is the statement.
