Doctor Funk
Named for an actual Dr. Bernard Funk who served as Robert Louis Stevenson’s physician in Samoa in the 1880s. Donn Beach put it on his menu in the 1930s; Jeff Berry reconstructed it for the revival. Pernod, grenadine, dual citrus, dark rum—a working drink with literary credentials.
The History
Originally created in 1880s Samoa by (or in honor of) Dr. Bernard Funk, who served as Robert Louis Stevenson’s personal physician during the author’s last years in Apia. Donn Beach put a tropicalized version on the Don the Beachcomber menu in the 1930s and it became a staple of the original tiki era. Reconstructed by Jeff Berry in Sippin’ Safari and now widely served at modern exotic-cocktail bars.
Ingredients
- 0.75 oz fresh lime juice
- 0.5 oz fresh lemon juice
- 0.5 oz grenadine (pomegranate-based)
- 0.25 oz Pernod
- 1 oz dark Jamaican rum (Smith & Cross or Hamilton)
- 1 oz Lemon Hart 151 demerara rum
- 1 oz club soda
- Crushed ice
- Mint sprig (garnish)
Directions
Combine all ingredients except club soda in a shaker with crushed ice.
Shake briefly to integrate.
Pour everything (ice included) into a Collins glass.
Top with the club soda.
Garnish with a mint sprig.
