The History
A modern home bar original drawing on the dark-and-stormy tradition, then pushed tropical with pineapple and brightened with lemon. The cinnamon stick garnish is both functional and theatrical.

Ingredients
- 1.5 oz Kraken black spiced rum
- 0.5 oz amber nectar or rich demerara syrup
- 0.5 oz fresh lemon juice
- 0.25 oz fresh ginger juice
- 2 oz fresh pineapple juice
- 1 cinnamon stick (garnish)
Directions
Make the ginger juice first: Peel fresh ginger, cut into chunks, and press with a lime press or juicer. You need 0.25 oz pure ginger juice.
Build the drink: Combine all ingredients in a cocktail shaker with ice.
Shake hard for 12 seconds.
Strain into a rocks glass over fresh ice.
Garnish with a cinnamon stick and a dusting of cinnamon.
