Homemade Rich Simple Syrup

Simple syrup at a 2:1 sugar-to-water ratio. Thicker, sweeter per volume, and required by name for the canonical Mai Tai and many other classic exotic-cocktail builds. Twenty minutes start to bottle.

Ingredients

  • 2 cups white sugar
  • 1 cup water

Directions

Combine the sugar and water in a small saucepan over low heat.

Stir gently until the sugar fully dissolves and the syrup is clear. Don’t let it boil.

Remove from heat and let cool to room temperature.

Bottle and refrigerate. Keeps a month or more refrigerated.
