Gardenia Mix
Donn Beach’s house mix for the Pearl Diver: butter, honey, vanilla, cinnamon, and allspice whisked into a tropical sauce that gets blended directly into the drink. Genuinely unusual. Genuinely worth the trouble.
Gardenia Mix (sometimes called Pearl Diver Mix or Pearl Diver Gardenia Mix) is one of the most distinctive prep-batched ingredients in the Donn Beach catalog. It’s a butter-based compound that gets combined with rum and citrus and flash-blended into a cocktail that drinks like nothing else in the tropical canon. The result has a silky, full body and a warm spice profile that’s instantly recognizable when you taste it.
The mix shows up primarily in the Pearl Diver, which is the drink it was invented for. A few other Donn Beach builds use it; some modern revival cocktails reference it. If you’ve made a batch, find an excuse to use it up—the keeping window is short.
Gardenia Mix was lost for fifty years and reconstructed by Jeff Berry from former Don the Beachcomber bartenders’ memories and recovered staff notebooks. The recipe in Sippin’ Safari is the canonical version.
