Flash Blend

A bartending technique: combine ingredients in a blender with crushed ice and blend on high for 3–5 seconds, then pour everything—ice included—into the glass. Faster than shaking, produces different texture, used for several canonical builds.

The flash blend is one of Donn Beach’s signature techniques, recovered and codified by the modern revival. Where a standard shake involves combining ingredients in a tin with cubed or whole ice and shaking for 10–15 seconds, the flash blend does roughly the same job—chill, dilute, integrate—in a blender, with crushed ice, in 3–5 seconds.

The technique matters because crushed-ice cocktails want a particular texture: cold, slightly slushy, integrated without being over-aerated. A long shake with crushed ice over-dilutes; a build-and-stir under-mixes. The flash blend produces a specific result that neither alternative quite hits.

How to do it

  1. Combine all liquid ingredients in a blender.
  2. Add about 1 cup of crushed (not cubed) ice.
  3. Blend on high for 3–5 seconds—just long enough to integrate, not long enough to fully homogenize.
  4. Pour everything (ice included) into the glass.

The first time you do it, the result will look watery and underwhelming. Taste it. The texture is the point.

Builds that traditionally use the flash blend

Most canonical Donn Beach builds use it; many of Trader Vic’s more complex builds use a variant.

The Vitamix blender is overkill but the gold standard. Any reasonably powerful blender works.
