Liber & Co. is what happens when three University of Texas undergrads decide the world needs a better tonic syrup, build one in a kitchen, and then keep going for fifteen years. Founders Robert Higginbotham, Adam Harris, and Chris Spear launched the company in 2011 with Liber Real Tonic—a quinine-forward concentrate meant to be mixed with soda water and gin for a real gin-and-tonic, not the high-fructose-corn-syrup approximation that most American bars were serving at the time. The tonic worked. Bars started carrying it. Liber expanded.
The current lineup runs roughly a dozen syrups. Liber Almond Orgeat is the one most relevant to exotic cocktails—made with real almonds, orange flower water, and cane sugar, with no almond extract. It’s a working alternative to making your own orgeat when you don’t want to spend an afternoon on it. Liber Spiced Honey Syrup rebuilds Donn Beach’s Honey Mix with allspice and clove built in, useful for any recipe that calls for spiced or Don’s-style honey mix. Liber Demerara Gum Syrup is the rich-syrup-plus-gum-arabic combination that gives drinks like the Saturn and many Mai Tai variants their characteristic body.
What makes Liber worth knowing: the syrups are made in small batches in Austin, the ingredient lists are short and recognizable, the sugar is real cane (no HFCS), and the price-to-quality ratio sits in a sweet spot between supermarket syrups (cheaper but worse) and full DIY (better but takes time).
