Tovolo

Seattle-based kitchen-tool company best known for the King Cube Ice Trays and Sphere Molds that brought clear, slow-melting cocktail ice into reach of home bartenders. The big ice you see in modern craft cocktails comes from a Tovolo mold roughly 80% of the time.

Tovolo is the company that put bar-quality ice in home freezers. Before the Tovolo silicone King Cube and Sphere molds arrived in the mid-2000s, getting a 2-inch ice cube at home required a specialty mold from a craft-cocktail supplier (expensive) or hand-cutting from a larger block (a project). Tovolo made silicone molds with snug lids, designed for clean release, that priced under $15 each and produced the right shape every time.

For exotic cocktails specifically, the relevant Tovolo products are different. The drinks themselves usually use crushed ice (Mai Tai, Zombie, Mojito) or cubed ice for shaking, neither of which needs a fancy mold. But for serving certain spirit-forward exotic drinks (Hemingway Daiquiri straight up, a Kingston Negroni on the rocks, a slow-sipping Painkiller) the Tovolo King Cube Ice Tray ($13) gives you 2-inch cubes that melt slowly and look correct in a rocks glass. The Tovolo Sphere Ice Molds ($15) produce 2.5-inch spheres for the same use case.

The other Tovolo product worth owning is the Tovolo Stainless Lewis Bag ($25)—a canvas-and-stainless ice-crushing bag that replaces the traditional Lewis bag at a more durable price point. Drop cubes in, wrap, hit with a mallet (the Tovolo bag comes with one), open, dump crushed ice into the drink. The Lewis bag is the right tool for tiki crushed ice; the Tovolo version is the right Lewis bag for a home bar.

Tovolo makes a dozen other ice trays in shapes that range from useful (the Star Wars-themed Death Star sphere, the Stratton classic cube) to gimmicky (penguins, sharks, dinosaurs). The King Cube, Sphere, and Lewis Bag are the three to focus on.
